Caol Ila Wilson and Morgan 30 yo 700ml Caol Ila is a funny brute of a whisky. Upfront and snarling at times, however a little patience can go a long way. Once you open the sexy black wooden box and remove the bottle from it's housing you have an immediate sense of quality. This independant bottling is astonishing. It's incredibly rare to see a whisky from Caol Ila as old as this, and it's time locked away in a barrel has toned down the smoke significantly. White chocolate, lemon peel and toffee are joined by a whisper of smoke and a bouquet of pears and honey. It's like somebody just blew out a candle on Carmen Miranda's birthday cake. The fruit notes don't go anywhere any time soon but are met with rich, earthy chocolate driven flavours, charred pineapple and smoke and black berries. These guys have done something right.
