Providence Rhum
Providence is a Haitian rum produced at the Distillerie de Port-au-Prince, a small distillery established in 2018 in Haiti’s capital. The project was created through a collaboration between the Barbancourt-Linge family of Haiti and the rum specialists of La Maison & Velier, with the aim of reviving Haiti’s historic cane-spirit tradition within a modern distillery.
While Haiti has long been known for its rural clairin distilleries, Providence represents a different approach: a purpose-built distillery designed to showcase Haitian sugar cane and fermentation techniques while maintaining precise control over distillation and ageing.
The Distillerie de Port-au-Prince
The distillery is located in Port-au-Prince and operates under the guidance of Herbert Barbancourt-Linge Jr., whose family is closely linked to Haiti’s rum heritage. The project also benefits from the expertise of Velier and master distiller Gianni Capovilla, who contributed to the design of the distillation system.
Providence was created with a clear objective: to produce rum that reflects the agricultural character of Haitian cane spirits while applying careful fermentation and distillation practices.
Raw Material and Fermentation
Providence rum is produced using the Cristalline variety of sugar cane, grown in northern Haiti. The distillery works with both fresh cane juice and cane syrup, a production approach that bridges traditional Haitian cane spirits and classic Caribbean rum production.
Fermentation is conducted using carefully selected yeasts and extended fermentation times to develop aromatic complexity before distillation.
This focus on fermentation plays a significant role in shaping the final spirit, producing rum with expressive fruit, herbal and cane-driven aromas.
Pot Still Distillation
Distillation takes place in a Müller bain-marie copper pot still, designed with input from master distiller Gianni Capovilla. This style of pot still allows gentle heating and precise distillation while preserving the aromatic compounds developed during fermentation.
The resulting spirit has a rich texture and strong distillate character, setting Providence apart from lighter column-distilled Caribbean rums.
Providence and Haitian Rum
Although Providence shares similarities with Haiti’s traditional clairin spirits, it is produced in a dedicated distillery rather than the small rural guildives where clairin is typically made.
Providence therefore sits between traditional clairin production and more structured Caribbean rum distillation, offering a refined interpretation of Haiti’s cane-spirit heritage.

Providence rums are known for their expressive cane-driven character and pot-still texture. Typical flavour notes include:
- fresh sugar cane and cane honey
- tropical fruit such as pineapple and mango
- herbal and floral aromatics

- spice and light oak in aged expressions
