Made famous in the late 18th century by bootleg distiller Magnus Eunson, the distillery behind Secret Orkney is the most northerly in Scotland. On the nose, this bottling matured in a first fill sherry cask proudly proclaims its island origins, offering an unbridled expression of omnipresent peat. On the palate, this now-more altruistic peat gradually makes room for incredibly lyrical, milky flavours of malt, fruit and earth.

Colour: topaz.

Nose: lively and creamy. Immediately, dried peat, herbs, florals and salt boldly fill the air. Allowed to breathe, the peat becomes even more present and oily. Little by little, notes of candied fruit (pear, Mirabelle plum) and tropical fruit (persimmon, pineapple) begin to appear.

Palate: rich, powerful. The peat is now far more reserved and has only a subtle influence on the tasting. In its place come beautiful milky, malty and fruity (orange, apricot) nuances. With time, pipe tobacco flavours coat the taste buds.

Finish: long, well-balanced. With medicine (mustard), lemon and vanilla notes, the finish plunges us into the scent of earth dampened by a summer storm. The retro-nasal olfaction reveals root notes (ginger, ginseng) and is covered in a fine layer of salted butter caramel.
