Black Gate Distillery: Heart‑land Aussie Whisky & Rum Tucked away on a 20‑acre property outside Mendooran, New South Wales, Black Gate Distillery is the labour of love of husband‑and‑wife team Brian and Genise Hollingworth. Since firing up their direct‑fired copper pot stills in 2011, the pair have become cult favourites among Australian whisky fans for their bold, rich single malts and molasses‑based pot‑still rum. Everything at Black Gate is done on a shoestring scale – mash bills are cooked over gas burners, ferments bubble away in open dairy vats, and spirit is laid down in mostly 100‑ and 200‑litre casks sourced from Apera (Australian sherry) and Australian fortified‑wine producers. The scorching hot summers and icy winters of the Central West drive an aggressive maturation, giving three‑year‑old whisky the depth of a decade‑old Scotch. Releases are strictly small‑batch and mostly cask strength, with each bottling hand‑labelled and numbered. The distillery’s ex‑sherry cask malts have racked up gold medals at the Australian Distilled Spirits Awards, while its dark, treacly Pot‑Still Rum regularly sells out within hours of release.
