Hobart Whisky: The Spirit of Tasmania, Cask by Cask Founded in 2014 by husband‑and‑wife duo Eddie and Kristy Batt, Hobart Whisky (registered as Devil’s Distillery) operates from a modest industrial shed in Moonah, just north of Tasmania’s capital. The team produces true grain‑to‑glass spirit: Tasmanian barley is milled, mashed, fermented and double‑distilled in a 900‑litre Australian‑made copper pot still before being filled into a tight selection of ex‑Bourbon, Apera and Pinot Noir casks. Tasmania’s cool, maritime climate tempers the maturation, drawing out layers of lemon curd, stone fruit and delicate oak. Each vatting is hand‑selected by head distiller Steve Weeks and bottled in numbered batches – often at natural cask strength – giving collectors complete transparency over wood type, fill date and bottle yield. In just a few short years the tiny outfit has won gold at the World Whiskies Awards, claimed “Best Australian Small Batch” at the Craft Spirit Awards and been shortlisted for Icons of Whisky Craft Producer. Their Single Cask #17‑0023 Apera release famously sold out online in 17 minutes.
