The Distillery 

 

Caol Ila Distillery is located on the northeast coast of the Isle of Islay, overlooking the Sound of Islay. The distillery was founded in 1846 by Hector Henderson, who saw the potential of the site as a location for a whisky distillery. The distillery's location provided access to abundant supplies of peat, water, and barley, making it an ideal location for producing high-quality single malt Scotch whisky.

Over the years, Caol Ila Distillery has undergone several changes in ownership and has been expanded and modernized to increase production capacity. In the 1970s, the distillery was acquired by the Distillers Company Limited (DCL), which later became part of Diageo. Under Diageo's ownership, the distillery has become known for producing a range of peated and unpeated single malt Scotch whiskies, which are highly regarded for their complexity, balance, and distinctive Islay character.

Today, Caol Ila Distillery is one of the largest producers of single malt Scotch whisky on the Isle of Islay. The distillery's whiskies are known for their distinctive smoky flavor, which is the result of the use of peat to dry the barley. Despite its large-scale production, Caol Ila remains committed to traditional whisky-making methods, including the use of wooden washbacks and direct-fired stills.
