Rhum Agricole

Rhum agricole is a traditional style of rum distilled directly from fresh sugar cane juice rather than molasses. This method produces a spirit that reflects the flavour of the cane itself, resulting in rhums that are often vibrant, aromatic and closely linked to the terroir where the cane is grown.

The style originated in the French Caribbean and is most strongly associated with the island of Martinique, where rhum agricole has been produced for over a century. Today, Martinique remains the global reference point for agricole rum, thanks to its unique production standards and strong agricultural heritage.

What Makes Rhum Agricole Different?

Most rum produced around the world is made from molasses, a by-product of sugar production. Rhum agricole, however, is made from freshly pressed sugar cane juice, which gives the spirit a very different flavour profile.

Because the juice begins fermenting soon after the cane is harvested, production must take place close to the cane fields. This agricultural connection is central to the style and explains why rhum agricole is most commonly produced in regions where cane is grown locally.

The resulting spirit typically shows flavours such as:

  • Fresh sugar cane and cut grass
  • Citrus peel and lime
  • Herbal and floral notes
  • Tropical fruit
  • A crisp mineral structure

For many rum enthusiasts, rhum agricole represents one of the most expressive and terroir-driven styles of rum.

Martinique and the AOC System

Martinique is the only rum-producing region in the world with an official appellation system: the AOC Martinique (Appellation d’Origine Contrôlée). Introduced in 1996, this system regulates how rhum agricole must be produced on the island.

The AOC establishes strict rules covering:

  • Ageing requirements for matured rhums

How Rhum Agricole Is Made

The production of rhum agricole begins with the harvesting of sugar cane. Once cut, the cane must be crushed quickly to extract fresh juice before oxidation begins.

The extracted juice, known as vesou, is then fermented to create a lightly alcoholic wash rich in aromatic compounds. Fermentation times can vary depending on the producer and desired style.

The fermented juice is distilled on a Creole column still, a type of column distillation apparatus traditional to the French Caribbean. Unlike many industrial rum stills, Creole columns are designed to retain aromatic compounds from the cane.

The resulting distillate is typically bottled in one of two main styles:

  • Rhum Blanc – unaged rhum, often bottled between 50–55% ABV
  • Rhum Vieux – aged rhum matured in oak casks

Tropical ageing conditions in Martinique allow rhums to develop complexity relatively quickly compared with spirits matured in cooler climates.

Martinique is home to several historic rhum distilleries, each producing distinctive interpretations of the agricole style.

  • Neisson – one of the smallest distilleries on the island, widely respected for its precise and aromatic rhums.
  • Rhum JM – located at the foot of Mount Pelée, known for powerful and structured aged rhums.
  • Clément – a historic estate with one of the broadest ranges of rhum agricole expressions.
  • Depaz – another Mount Pelée distillery producing rich and characterful rhums.
  • La Favorite – a traditional family distillery still operating steam-powered equipment.

Each distillery works with its own cane sources, fermentation practices and maturation approaches, creating a wide range of flavour profiles within the agricole category.

Among the distilleries of Martinique, Neisson has developed a particularly strong reputation among rum enthusiasts. Founded in 1931 and still family-owned, the distillery is known for its small production scale and careful attention to fermentation and distillation.

Neisson’s rhums often show remarkable aromatic clarity, with bright cane notes, citrus, herbs and a crisp mineral structure. The flagship Neisson Blanc 52.5% is widely considered one of the benchmark expressions of rhum agricole.
