A complex, bitter Spanish sherry-based aperitif from Jerez, revived from historic recipes. Blending old Oloroso and Pedro Ximénez from Valdespino's historic soleras, including El Candado, with botanicals like cinchona bark, gentian root, licorice, nutmeg, and dried citrus.

Nose: Aniseed, alpine herbs, nutmeg, dates, orange peel, roasted nuts, hints of caramel, vanilla, and clove.

Palate: Sweet bitterness, with licorice, dried fruit, subtle vanilla, and savory roasted notes.

Finish: Long, complex, with lingering bitterness, saline minerality, and spice.

Valdespino is one of Spain's oldest and most prestigious sherry producers, founded in Jerez de la Frontera, with origins tracing back to the 13th century when King Alfonso X granted land to the Valdespino family for their service. Known for traditional methods and single-vineyard wines from their own Macharnudo Alto vineyard, they produce high-quality Sherries like Fino Inocente and Pedro Ximénez, ageing them extensively in soleras, and are now part of Grupo Estévez.
