Single Cask #4993 is an example of how seriously Ichiro’s team treat their blended whisky. Built from malt and grain components and laid down for a full decade in a single sherry cask; it has been bottled as a single cask because it simply didn’t behave like a standard batch. The result drinks much closer to a mature malt than a “blend” in the usual sense.

Tasting Notes

Nose: Dried citrus, deep sherry (yet not overpowering), honey, varnished oak and sweet grain. 

Palate: A confident mix of malt richness and grain elegance with vanilla, toffee, stone fruit and Christmas pudding spice all blended together beautifully.

Finish: A pure continuation of the palate with a touch more oak to balance the dense fruitcake. 

Chichibu Distillery

Founded in 2004 by Ichiro Akuto, grandson of the founder of Hanyu Distillery, Chichibu Distillery is located in the Saitama Prefecture in the town of Chichibu. In terms of output, they are one of the smallest distilleries in Japan, producing only a small amount of single malt whisky each year. 

Chichibu’s focus is on using traditional whisky making techniques and ensuring quality in every whisky they produce. They source water from the nearby high mineral content Chichibu River, along with a small amount of peated barley to tie everything together. Chichibu whiskies are highly regarded by whisky enthusiasts, for both the numerous awards they have won over the years and their exceptional balance of flavour, texture and overall quality.
