This 2004 Saint Lucia rum from the Flag Series was made from molasses fermented for nearly two days, distilled in a Vendome pot still, then aged for two years in a tropical climate and 19 years in a continental one.

It keeps a smoky, youthful edge while showing the depth of long maturation. Vanilla, agave, artichoke heart, ripe banana, pineapple and warm cane sugar lead the nose, with rubbery, medicinal and roasted-fruit notes emerging with air. The palate is concentrated and vibrant, moving through cane, coconut, vanilla, pear, banana and acacia honey before a long finish of chocolate, liquorice, rum baba and vanilla flan.
