Flag Series 21 Years Old 2004 Saint Lucia Rum 700ml

58.3% ABV, 700ml. Saint Lucia. Series: Flag Series.

The only active distillery on the volcanic island of Saint Lucia was born in 1972 from the merger of the last two operational units. Crafted from molasses that fermented for nearly two days, this rum was distilled in a Vendôme pot still, then aged for two years in a tropical climate followed by nineteen years in a continental one. While retaining all the smoky intensity of its youthful character, its aromatic and flavour profile also displays a mature expression, punctuated by rare and indulgent chocolatey notes.

Tasting Notes:

Nose : Rich, complex. A blend of intense aromas of vanilla, agave, artichoke heart, ripe banana and pineapple, and warm cane sugar, the aromatic profile is immediately compelling. With aeration, it becomes more empyreumatic (rubber) and medicinal (balm). The bananas are flambéed, the pineapples roasted.

Appearance : jaune doré soutenu.

Palate : Lively, vibrant. Highly concentrated, the flavour profile is both herbaceous (agave, cane), milky (coconut), vanilla-laced, and liqueur-like (cane sugar). Radiant, it then reveals all the elegance of a freshly distilled spirit, followed by honeyed notes (agave, acacia) and intensely fruity flavours (Williams pear, banana).

Overall : Long, full. More chocolatey and subtly liquorice-like, the finish invites indulgence in a rum baba or a creamy vanilla flan. With conviction, the retro-olfaction conveys the fibrous texture of sugarcane and radiates maturity. Long after, the empty glass releases aromas of mushrooms and moss, full of depth and calm.
