Signatory Vintage's Un-Chillfiltered Collection is a natural home for Ballechin when the cask can carry its peat cleanly. This 2008 vintage, selected by The Nectar, is a bold bourbon-matured expression built around farmyard smoke, fruit and sweet cask lift.

The nose brings honey, vanilla, apples, stone fruit and barbecue smoke. The palate keeps the honey moving with banana, apple, pepper and a savoury bacon-like note, before a medium to long finish where fruit and smoke continue to linger.
