Agave spirits can be bright and mineral, earthy and smoky, floral, peppery or deeply savoury. Their character begins with the variety of agave and where it was grown, then develops through cooking, fermentation and distillation.

At Casa de Vinos, we are interested in bottles that tell you something about the agave, the place and the people who made them—whether that means a precise blanco tequila, a traditionally produced mezcal or a mature expression shaped by time in oak.

Tequila or mezcal?

Tequila is made within designated regions of Mexico, principally from Blue Weber agave. Blanco tequila usually shows the clearest agave character, while reposado and añejo expressions introduce different degrees of oak maturation.

Mezcal can be made from many agave varieties across several protected regions. Production methods vary considerably, but traditional examples may show smoke, roasted agave, earth, herbs, fruit and pronounced regional character.

How to choose an agave spirit

If you enjoy fresh, clean and peppery spirits, begin with a well-made blanco tequila. Choose reposado when you want the agave softened by a short period in oak, or añejo for a richer and more mature style.

For something earthier or more savoury, look through our mezcal selection. The agave variety, village, producer and production method are often more informative than age alone, so check the individual bottle page for those details.
