Tequila

Good tequila should still taste of agave. It might be bright and peppery, soft and floral, or show cooked agave, citrus, herbs and earthy sweetness. Time in oak can add spice and richness, but the character of the agave should remain at the centre of the spirit.

What is tequila made from?

Tequila is produced from Blue Weber agave within designated regions of Mexico, most notably Jalisco. Bottles labelled “100% agave” are made entirely from Blue Weber agave sugars and bottled under the producer’s control.

Where the agave is grown, how it is cooked, the length of fermentation and the type of still can all affect the flavour. These production details are often more useful than packaging or price when comparing bottles.

Blanco, reposado or añejo?

Blanco tequila is unaged or rested only briefly. It usually provides the clearest view of the cooked agave, with citrus, pepper, herbs and mineral flavours. Choose blanco for Margaritas, Palomas or neat drinking when you want the agave to remain fresh and direct.

Reposado tequila spends at least two months in oak. The cask can soften the spirit and introduce vanilla, gentle spice and a rounder texture without completely covering the agave. It is often the easiest starting point for whisky or brandy drinkers.

Añejo tequila is matured for at least one year, while extra añejo spends at least three years in oak. These styles are richer and more cask-driven, making them better suited to slow sipping and after-dinner drinking.

Choosing a tequila

For cocktails, begin with a well-made blanco or reposado that retains enough agave character to remain present alongside citrus and other ingredients. For neat drinking, consider whether you prefer the freshness of an unaged spirit or the softer, richer character that comes with oak.

If you are buying a gift, think about the person before choosing the most elaborate bottle. An experienced agave drinker may prefer a traditional blanco with plenty of character, while a polished reposado or añejo may have broader appeal.
