NcNoch Organic Blended Malt Scotch Whisky Aged Over 5 Years 700ml | 48.5% ABV

NcNoch is a small-batch organic blended malt from Thompson Bros, combining 80% Nc'Nean with 20% Dornoch. Both distilleries are part of Scotland's newer generation of small producers, with a strong focus on fermentation and distillate character.

The production is particularly unusual: Thompson Bros states that eight different yeast varieties contributed to the spirit across the two distilleries — three at Nc'Nean, including a rum yeast, and five brewer's yeast varieties at Dornoch. That makes fermentation, rather than heavy cask influence, central to the character of the whisky.

Aged for more than five years and bottled at 48.5% ABV, the 2023 release had an outturn of 377 bottles. The style is bright and fruit-led, with citrus, apricot and peach alongside more herbal, cereal and lightly mineral notes.
