Nose: rich, layered. From powdered notes of rice to rancio (candied orange), roasted coffee, herbal infusions (chamomile), heady florals (iris butter), autumnal scents (mushroom, moss), sun-dried grapes, juicy Rennet apple and medicinal (mustard poultice) notes... the aroma palette is bright, concentrated and complex. 

Palate: generous, noble. With a little more oxidation than the nose, reflected in flavours of curry, fresh walnut, grated ginger and hay, the palate brings to mind a Jura vin de paille. Over time, tangy notes of candied lemon and mustard grain add beautiful energy. A few grains of barley appear.

Finish: smooth yet slightly tannic. Driven by a lovely liquorice bitterness, the finish becomes richer (flan) and seeped in nuances of sage tea. On the retro-nasal olfaction, the malt found on the finish becomes bolder, evoking a malting floor. The empty glass is dominated by medicinal aromas and gentian root.
