Bottled as part of the new partnership between Casa de Vinos and Thompson Bros, this release totalled 96 bottles. For the second in our three releases, we chose a Bowmore matured in re-fill cask No. 61. Celebrated by whisky lovers across the globe, Bowmore stands as one of the great names in Scotch whisky and this expression more than lives up to its reputation.

Staff Tasting Notes

Nose: Charred lemon slices and citrus-led peat. Bright and zesty at first, becoming more honeyed with air. Cinnamon and white pepper alongside fresh dough and soft cereal notes, demerara sugar, and banana-honey porridge. The peat remains gentle and well integrated.

Palate: Lemon, orange and touches of mango upfront, followed by soft peat smoke. Pineapple juice, iodine, and salted, charred citrus develop, with a light whisky-sour character supported by yellow fruits and honey.

Finish: Medium-long. Soft peat and char with mineral pineapple, salted caramel, oak, and iodine. Charred lemon drops and a final touch of mango.

Overall: An excellent example of pure Bowmore distillate left to shine in a refill cask.

In addition to this new endeavour, they also began distilling whisky and gin onsite at Dornoch Castle Hotel. Since 2017 they have been releasing outstanding whisky and rums through their Thompson Bros label as well as laying down hundreds of casks filled with soon to be Dornoch Whisky.
