Waubs Harbour Tokay Cask Single Malt Whisky 500ml - 59.5%

This beautifully decadent maritime whisky is the result of a unique, ongoing collaboration between Head Distiller Rob and their Cooper, Laurie. Achieved through a unique collaboration where an old French Oak Tokay cask was coopered and finished to impart intense fruit and sweet complexity, blending Apera cask maturation with that unique Tokay syrup essence. It's a special, small-batch release highlighting their on-site cooperage and distiller expertise. 

Nose: Light pear, malt and oak. Pear is poached, malt is shortcrust pastry, oak is spices like cinnamon, anise, raisin or sultana spiced syrup.

Palate: Poached pear syrup, juicy sultana and spice mix of cinnamon, almond, nuttiness, baked walnuts, caramelised fig and salted caramel.

Finish: Deliciously buttery, pear syrup and wood oak spice profile. Long and delicious finish.

Waubs Harbour is a family-run Tasmanian distillery in Bicheno, known for its maritime single malt whiskies, matured right by the ocean in an old oyster hatchery, giving it a distinct briny character. Founded by the Polmear family (Tim, Bec, and Rob), it focuses on small-batch production, utilizing local resources like saltwater for cooling and creating unique expressions, including peated whiskies with subtle salt marsh influences. They offer tastings and tours, showcasing their distinctive coastal-influenced spirits.
