The Kanosuke Hioki Pot Still Limited Edition 2024 is a distinctive Japanese-style whisky, crafted using unique stainless steel pot stills operated under vacuum pressure. Distilled from a blend of malted barley and locally sourced Japanese un-malted barley at our Hioki Distillery, this whisky embodies precision and character. After distillation, it is carefully matured at the Kanosuke Distillery in a selection of casks, including new American white oak, ex-Bourbon barrels, and re-charred ex-shochu casks—adding complexity and depth to its profile.

Tasting Notes

Nose: Crème brûlée, new oak, apricots, fresh plums

Kanosuke Distillery

Founded in 2017, Kanosuke Distillery is already making waves in the world of whisky, with its innovative approach to production and maturation. The distillery itself is located in Kagoshima Prefecture on the southern Island Kyushu. Kanosuke also has a long history of distilling shochu in Japan, allowing them access to their very own shochu casks. Their combination of traditional whisky making techniques with the addition of ex-Shochu barrels for maturation create a unique whisky profile not found elsewhere.
