Kanosuke Hioki Pot Still Single Pot Japanese Whisky 700ml 51%
Hioki is the name of the sister distillery and predecessor of Kanosuke made infamous by their release of Kozuru Mellowed, a 100% rice based Shochu aged in American White Oak. While Hioki is infamous for their range of Shochu, they now produce a range of different products such as Gin and both Grain and Malt whisky and are currently on their 4th generation of ownership in the Komasa family.
Hioki Pot Still is made from both malted and unmalted barley then mashed, fermented and distilled in a copper pot still. The resulting new make is then transferred into both Virgin American White Oak and Ex-Bourbon casks to be matured at Kanosuke Distillery. Hioki is situated 10 minutes north of Kanosuke Distillery benefitting from the same climate and temperature which lends to the the rich, mellow whisky Kanosuke is known for.
Nose: Butter Biscuits, Apricots, Plum, Citrus, Caramel.
Taste: Marmalade, Orange, Vanilla, Almonds.
Finish: Vanilla, Dry Ginger, Cinnamon, Soft and gentle sweetness.
Kanosuke Distillery
Founded in 2017, Kanosuke Distillery is already making waves in the world of whisky, with its innovative approach to production and maturation. The distillery itself is located in Kagoshima Prefecture on the southern Island Kyushu. Kanosuke also has a long history of distilling shochu in Japan, allowing them access to their very own shochu casks. Their combination of traditional whisky making techniques with the addition of ex-Shochu barrels for maturation create a unique whisky profile not found elsewhere.
