This Sullivans Cove American Oak is a single cask single malt, matured for 10 years and 11 months in a barrel that had previously held Sullivans Cove whisky. The result is a softer oak influence, allowing clearer notes from the character of the spirit while still carrying the exceptional profile of the carefully selected american oak cask.

The nose carries notes of orchard fruit, sweet biscuits, and subtle florals. The palate develops with tastes of stone fruit, herbs, and chamomile. The lengthy finish leaves you with orange zest and a toasty maple sweetness.

Sullivans Cove

Founded in 1994 as the second (ever) whisky distillery on the island of Tasmania, Sullivans Cove have since established themselves as a pillar of Australian whisky distilling. Although established in 1994, distillation of the whisky for which Sullivans Cove is now known began in 1999 with the distillery’s transfer to Highland Holdings ownership. Then in 2004 ownership was transferred again to Tasmania Distillery until the company changed name to reflect their whisky, thereafter being known as Sullivans Cove Distillery Pty. Ltd..
