This Sullivans Cove was matured in an ex-apera french oak cask for 10 years before it was bottled at 47.6%. Celebrating Australia’s fortified wine industry, this cask marries the decadent fruit nights of apera with Sullivans Cove’s remarkable spirit.

The nose carries notes of brown sugar, chocolate and black current. Dark fruits, dates, and baking spices develop on the palate, finishing with tiramasu and spiced wine.

Sullivans Cove

Founded in 1994 as the second (ever) whisky distillery on the island of Tasmania, Sullivans Cove have since established themselves as a pillar of Australian whisky distilling. Although established in 1994, distillation of the whisky for which Sullivans Cove is now known began in 1999 with the distillery’s transfer to Highland Holdings ownership. Then in 2004 ownership was transferred again to Tasmania Distillery until the company changed name to reflect their whisky, thereafter being known as Sullivans Cove Distillery Pty. Ltd..
